Child Nutrition Update
There has been some recent concern about Lean Finely Textured Beef (LFTB) used in school cafeterias. DeSoto ISD Child Nutrition beef is purchased from Advance/Pierre Foods which does not add LFTB to their commercial school products. However, the commodity meat that is sent to Advance/Pierre Foods for further processing is purchased by the USDA under their approved specifications which may include small amounts of LFTB, less than 6%.
The process of using ammonia hydroxide to manufacture LFTB beef is approved by the USDA and has been proven to be wholesome and safe. Commodity beef does not currently require any special labeling if it includes LFTB. The USDA is planning changes to that labeling.
THE USDA continues to affirm the safety of Lean Finely Textured Beef product for all consumers and urges customers to consult science based information on the safety and quality of this product. Lean Finely Textured Beef is a meat product derived from a process which separates fatty pieces from beef trimmings to reduce the overall fat content.
